MEXICO DECAF - BLOW OUT SALE
Story
The mountains of southern Mexico have long been a source of mystical lore. From the Pacific coast to mountain peaks in excess of 4,000 meters the regions of Oaxaca and Chiapas are rich in bio-diversity. Mexico is the start of our Latin American coffee journey that extends all the way to Brazil. We visited a coffee farm several years ago in Oaxaca, our first coffee farm experience - Mexico has always held a special place in our hearts.
Bean
Our first decaf coffee is sourced from magical Mexico through a collective of farmers in both Oaxaca and Chiapas. The decaffeination process used to produce these specialty beans is done through a natural Swiss Water process, which maintains the beans' natural flavors and characteristics. This results in a decaf coffee that is just as flavorful and complex as regular coffee.This specialty coffee has the perfect balance from the two regions, caramel notes typical with beans from Oaxaca and milk chocolate sweetness from Chiapas.
Region
Coffee has been growing in Mexico since the 1700's, the majority of the coffee grown in the country now are with farming collectives. Over 40% of the coffee grown in Chiapas alone, the higher elevations and increased precipitation make for ideal coffee growing conditions. The lower growing elevations within the Oaxaca coffee regions tend to promote more floral fruity notes.
